Ingredients for wheat free pasta:

  • 1 cup of brown rice flour
  • 1/2 cup of tapioca starch.
  • 1/2 cup pf white rice flour.
  • 1/2 teaspoon of  guar gum or the xanthan gum, it is optional.
  • Generous pinch of the sea salt.
  • 3 eggs.
  • 1 tablespoon of water.

Procedure for making wheat free pasta:

  1. Blend the dried ingredients in the bowl with the whisk. Tip out onto the clean bench, then making a mound with a well in the centre. Now Break the eggs into the well and beat with the fork, now drawing in the flour from the sides of the well. Then Continue beating them until the mixture is getting thick and then use the hands to mix in the remaining flour. Now If the mixture seems the bit dry add the little water. Now Knead the dough until it is getting relatively smooth; it will not be stretchy like the wheat dough. Then Wrap in cling wrap and rest for thirty minutes.

Divide the dough that you just kneaded into 4 portions. Take 1 portion and roll out using the pasta roller or with the rolling pin between 2 pieces of the baking paper; now keep the rest of the dough covered when you do this. now he dough should be almost thin enough to see through it, it must be less than 1 mm. Use the little rice flour to dust the things down if the pasta is getting sticky.

If you do not use all pasta straight away, you could keep the dough in the fridge for the couple of days to be rolled out at later, or you could freeze the rolled pasta sheets between the layers of the cling wrap. You can also make the big batch of filled pasta and can freeze some to be cooked from the frozen later on (the meat fillings should be cooked before filling the pasta).

To cook the pasta, you have to bring a large pot of salted water to the boil. now  Add the pasta, gently stir, then cook using the times in the notes as you havebeen guided.
