Ingredients include

70 grams white rice flour.

90 grams tapioca flour.

70 grams cornstarch.

1 tablespoon potato flour.

1 tsp of xanthan gum

1 tsp of unflavoured vegetarian gelatine we will used Agar flakes.

12 tsp of baking powder

14 of tsp salt

12 tbsp of sugar

225 ml of warm water

2 14 tsp dry yeast

1 tsp cider vinegar

A medium egg, which is  beaten

2 tbsp olive oil or the  flavor less oil

Directions or procedure:

Preheat oven for  190°C that is 375°F

  1. Lightly oil the 6 baking rings approximately  3½” in  diameter, now place on a baking tray.
  2. In the bowl mix together the rice flour, the tapioca flour, the corn flour, the potato flour, the xanthan gum, the gelatine, the baking powder and the salt. Set it aside.
  3. Add one teaspoon of the sugar to the warm water and then sprinkle on the yeast. Set it aside to foam it slightly.
  4. In another bowl mix together remaining sugar, the vinegar, egg and the oil. Add the yeast mixture in to it.
  5. Pour the liquid in a well in the middle of the dry flour mix and mix it thoroughly, using the wooden spoon beat the mixture until it gets smooth, it only takes a couple of minutes.
  6. Spoon the batter into prepared rings. Cover lightly with the plastic and let it rise in the warm place until double in size the generally about 45 minutes, but if you have somewhere warm it will become quicker
  7. Bake in the preheated oven for 20 to 22

Ingredients include:

400 grams brown rice flour.

80 grams potato starch.

150 grams of butter, the low fat spread or margarine.

2 tbsp baking powder the 2 tbsp may seem like a lot but they are needed.

4 tsp of the  xanthan gum.

A pinch of salt.

100 grams of cheddar, grated.

100ml of milk it has substitute non dairy alternative.

4 tbsp of low fat natural yogurt.

2 large eggs, beaten.

Directions or procedure

Preheat oven for 220°C, 425°F

  1. Line the baking tray with the non stick baking paper.
  2. Put flours, fat, the baking powder, the xanthan gum and salt into the bowl and mix until it get resembles fine breadcrumbs. Then add grated cheese and mix it.
  3. In the separate bowl mix the milk,  the yogurt, the  beaten eggs and the mustard together then add to the dry ingredient.
  4. Cut mixture together using the palette knife or any wide bladed knife, now finish off by compressing together with the hands. If dough appears too dry then add a] little more milk to moisten it. The finished dough will be soft but not sticky.
  5. Tip scone dough onto the lightly rice floured surface, knead it gently until it gets fairly smooth, now roll it out to 2.5cm to 3cm (1 to 1¼”) thick. Secret of the well risen scones is to start off with the thickness no less than 2.5cm (1″) thick.
  6. Cut out scones using cutter approximately 5cm (2″) in diameter. Place each on the baking tray.

  8. Preheat oven for  200°C, 400°F.

  1. In mixing bowl combine rice flour, tapioca flour, the dried yeast, the xanthan gum, and the agar.
  2. In separate bowl mix olive oil, the vinegar, the sugar, and warm water.
  3. Make well in the centre of dry ingredients and add wet mixture. Beat well for 5 to 6 minutes by hand, or for three minutes in the food mixer. The dough must be soft and slightly sticky.
  4. Line baking sheet with the baking parchment, or the lightly oil and rice flour. Halve dough, place on  baking sheet and using your hands knead  dough until it is smooth, then roll it into a circular shape approximately 15cm  diameter, sprinkle with rice flour to stop the sticking.
  5. The dough should end up approximately 2cm thick.
  6. Bake flatbread for 10 minutes.
  7. Top the flatbread with grated cheese and additional toppings if you are using, now put back into the oven for 18 to 20 minutes until golden brown and becomes crispy. Enjoy your Wheat free bread recipes.
