The soy or soybean bean is the species of the legume native to the East Asia. It is widely grown for it edible bean which has wide uses. Now we will review some foods with soy.

Edamame soybeans are harvested when its beans are still green and have sweet tasting. They can be served as snack or main vegetable after boiling  it in the slightly salted water from15 to 20 minutes. These beans are high in the protein and the fiber and contain no cholesterol in it. It can be bought shelled or even in the pod in the supermarket  and produce section or the frozen food aisle.

Meat Alternatives

Meat alternatives that contain soy protein or the tofu are used to imitate the meat,. It include foods like as burgers, the sausages, the bacon and hot dogs. Commonly, they are cholesterol free and lower in the fat as compare to the meat. They are very excellent sources of the protein, iron and B vitamin.


It is very rich in salty soy paste and is used in the Japanese cooking.  Japanese make the miso soup and use it to flavor the variety of foods like as sauces, dressings and the marinades. Miso paste must be refrigerated. It contains the minimal soy protein and it is high in the sodium.


Soybeans which are soaked, ground fine and then strained produce the fluid called as soybean milk. The Plain, unfortified soymilk is the excellent source of the high quality protein and B vitamin, but it lacks the calcium and the vitamin D. Fortified versions are available too.

Soymilk could be found in the non refrigerated containers or in dairy case at supermarket. It is also sold as a powder to be mixed with water.

It is an excellent milk substitute for those people who are lactose intolerant. It could be used as the beverage or even in place of the milk in the cooking.

Soy Nuts

Roasted soy nuts are the whole soybeans which have been soaked in the water and then baked until they get browned. They come in the variety of the flavors. They are high in the protein and isoflavones. They are similar in the texture and in flavor to the peanuts.

Soy Sauce like Tamari, Shoyu and the Teriyaki

It is a dark brown liquid made from the soybeans that have undergone the fermenting process. Soy sauce contain minimal soy protein and it is high in the salt concentration.

Two types of soy sauce are there,  shoyu and tamari. Shoyu is the blend of the soybeans and the wheat. Tamari is made only from the soybeans and is a by-product of miso.  There is another sauce containing the soy sauce is the teriyaki sauce. It contains the soy sauce and some other ingredients like as sugar, vinegar and the spices.


It is a chunky, tenderly soybean product. The Whole soybeans which is sometimes mixed with some other grains like as rice or the millet. They are fermented and then pressed into the cake or the bar with the smoky or the nutty flavor. It caould be sliced, marinated and grilled. It could be  added to the soups, casseroles or the chili. Tempeh is found in the Asian and in the health food stores.

Textured Soy Protein

It is also known as TSP and it refers to the products made from the textured soy flour, the textured soy protein concentrates and spun the soy fiber.  The textured soy flour contains about seventy percent of protein and it retains most of the bean dietary fiber. The textured soy flour is sold dried in the granular and chunk style. When it is hydrated it has the chewy texture. It is used as a meat extender. It has one of the more popular brands  and is called as Textured Vegetable Protein and is abbreviated as TVP.

Tofu is also known as the soybean curd. It is a soft, smooth soy product made by curdling the fresh hot soymilk with the coagulant. It has a mild flavor and it can easily absorb the flavors of the marinades, the spices and some other ingredients. It is rich in high quality protein and with B vitamins, and low in the sodium. There are 2 main types of the tofu:

  • Water packed tofu: It comes in extra firm, firm and in soft varieties. The tofu is dense and is solid and holds up well in the stir fry dishes and soups, on grill or anywhere you want the tofu to maintain the shape.
  • Silken tofu comes: It is in extra firm, firm, soft and it has reduced fat varieties. This tofu is made by the slightly different process that results in the softer product. The Silken tofu works well in the pureed or the blended dishes.

Whole Soybeans

When the soybeans mature in the pod they ripen into the hard, dry bean, similar to some other legumes. Most of them mature soybeans are yellow; however some are brown and black as well.

These soybeans are the excellent source of the protein and the dietary fiber. They could be cooked and could be used in the sauces, stews, and in the soups. Whole soybeans which have been soaked could be roasted for the snacks and are available in the natural food stores and some of the supermarkets. When grown without the chemicals they are referred to as organically grown soybeans.
